Crunchy Peanut Butter Cookies

Ingredients

Main Ingredients:
1 cup crunchy peanut butter
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Instructions

Preparation:
1. Preheat oven to 350°F (175°C).
2. Line baking sheets with parchment paper.

Mixing:
1. In a large bowl, cream together butter and sugars until light and fluffy.
2. Add eggs, one at a time, beating well after each addition.
3. Stir in crunchy peanut butter and vanilla extract.

Combining:
1. In a separate bowl, whisk together flour, baking soda, and salt.
2. Gradually add dry ingredients to the wet mixture, stirring until combined.

Baking:
1. Scoop dough onto prepared baking sheets, spacing 2 inches apart.
2. Bake for 10-12 minutes or until edges are golden brown.
3. Cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

For a gluten-free version, substitute with almond flour. Adjust sweetness by using honey instead of sugar.
