Ingredients

Dry Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats

Wet Ingredients:
1/2 cup unsalted butter, softened
1/2 cup coconut sugar
1/4 cup honey
1 large egg
1 teaspoon vanilla extract

Mix-ins:
1 cup raisins
1/2 cup chopped walnuts (optional)

Instructions

Preparation:
Preheat oven to 350°F (175°C).
Line baking sheets with parchment paper.

Mixing:
In a bowl, whisk together flour, baking soda, and salt.
In another bowl, cream butter, coconut sugar, and honey until fluffy.
Beat in egg and vanilla extract.

Combining:
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Fold in oats, raisins, and walnuts.

Baking:
Drop spoonfuls of dough onto prepared baking sheets.
Bake for 18-20 minutes or until golden brown.

Notes

For a softer texture, add a tablespoon of applesauce. Substitute coconut sugar for a similar flavor to brown sugar.
