Ingredients

Dry Ingredients:
2 cups gluten-free all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Wet Ingredients:
1/2 cup unsalted butter, softened
1/2 cup coconut sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract

Add-ins:
1 cup chocolate chips or chunks


Instructions

Preparation:
1. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.

Mixing:
1. In a larger bowl, beat the softened butter with the coconut sugar and granulated sugar until light and fluffy.
2. Beat in the egg and vanilla extract until smooth.

Combining:
1. Slowly add the dry ingredients to the wet mixture, mixing just until combined.
2. Fold in the chocolate chips or chunks.

Baking:
1. Chill the dough for at least 30 minutes.
2. Preheat oven to 350°F (175°C).
3. Line a baking sheet with a silicone mat or parchment paper.
4. Scoop the dough onto the prepared sheet, spacing them about 2 inches apart.
