Ingredients
1 cup gluten-free all-purpose flour (with xanthan gum)
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
3. In a large mixing bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy.
4. Beat in the egg and vanilla extract until fully incorporated.
5. Gradually add dry ingredients to wet mixture, mixing until just combined.
6. Fold in chocolate chips until evenly distributed.
7. Drop tablespoon-sized balls of dough onto prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 10-12 minutes or until edges are set. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
