1 cup coconut oil or applesauce
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old-fashioned oats
1 cup raisins or chocolate chips (optional)
Instructions
Preparation:
1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, beat the coconut oil or applesauce with both sugars until well mixed.
3. Add the eggs and vanilla extract, and continue beating until smooth.
4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Stir in the oats and any optional add-ins like raisins or chocolate chips.
7. Scoop the dough onto the prepared baking sheets, leaving enough space for the cookies to spread.
8. Bake for about 10-12 minutes, or until the cookies are golden brown around the edges.
9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
