Ingredients

1 cup (2 sticks) unsalted butter, softened

3 oz cream cheese, softened

1 ½ cups granulated sugar

1 large egg

2 tsp vanilla extract

½ tsp almond extract (optional)

2 ¾ cups all-purpose flour

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

Extra sugar, for sprinkling tops
Instructions

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

In a large mixing bowl, cream together the butter and cream cheese until smooth and fluffy.

Add sugar and beat again until the mixture is pale and light.

Mix in the egg, vanilla extract, and almond extract (if using), scraping the sides of the bowl as needed.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.

Scoop dough into tablespoon-sized balls and roll between your hands.

Place dough balls on prepared baking sheets about 2 inches apart. Gently flatten each one with your fingers or the bottom of a glass.

Sprinkle tops with a bit of sugar.

Bake for 9–11 minutes, or until edges are just lightly golden. Centers will look soft—don’t overbake!

Cool on the tray for 5 minutes, then transfer to a wire rack to finish cooling.
