A delightful vegan chocolate chip cookie recipe with crispy edges and chewy centers.
Ingredients
Dry Ingredients:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Wet Ingredients:
1/2 cup coconut oil or vegan butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons non-dairy milk
Add-ins:
1 cup vegan chocolate chips
Instructions
Preparation:
1. Preheat oven to 350°F (175°C).
2. Line a baking sheet with parchment paper.
Mixing:
1. In a medium bowl, whisk together flour, baking soda, and salt.
2. In a large bowl, beat coconut oil with brown sugar and granulated sugar until creamy.
3. Stir in vanilla extract and non-dairy milk until well combined.
Combining:
1. Gradually add dry ingredients to wet mixture, stirring until just combined.
2. Fold in vegan chocolate chips.
Baking:
1. Chill dough for at least 30 minutes.
2. Scoop tablespoon-sized balls of dough onto prepared baking sheet.
3. Bake for 10-12 minutes, or until edges are golden brown.
Cooling:
1. Let cookies cool on baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, use room temperature ingredients and don’t skip the chilling step.
