Ingredients

  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum)

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 ½ tsp pure vanilla extract

  • ½ tsp almond extract (optional)


Instructions

  • In a large bowl, cream the butter and sugar until light and fluffy.

  • Add the egg, vanilla, and almond extract. Mix until smooth.

  • In a separate bowl, whisk together the gluten-free flour, baking powder, and salt.

  • Gradually add dry ingredients to the wet mixture and stir until dough forms.

  • Divide dough into two discs. Wrap and chill for at least 1 hour.

  • Preheat oven to 350°F (180°C). Line baking sheets with parchment.

  • Roll out dough between parchment to ¼ inch thickness.

  • Cut into rounds or shapes. Place 2 inches apart on baking sheet.

  • Bake for 8–10 minutes or until edges are just lightly golden.

 

  • Cool on tray before decorating or storing.
